FODMAP – Make sure you pull the “rib strings” of the celery stalks before dicing them. This is a dish that taking the onions and garlic out does make a difference. Therefore, I suggest adding the coconut cream and making one of the tomato cans a flavored one such as Italian herbs. 🍅Macros – Make a full recipe in your app and divide it per servings. If you’re not dividing it equally, then it may be a guessing game, so do your best guess. To keep the macros low, the nutritional information here is done without the coconut cream, so if you add it, make sure you log it.đź—’Â
Servings-6 bowls (can be spread out more to 12 small bowls as an appetizer or a side dish)
Ingredients
– 8 cups of chicken stock, preferably bone broth
– 2 cans of fire roasted tomatoes (14 ½ oz each)Â
– 3 freshly diced celery stalks
– 3 freshly diced carrots
– 4 tablespoons of tomato paste
– 3 tablespoons of tapioca flourÂ
– 2 tablespoons of ghee
– Kosher salt and white pepper to taste
– ÂĽ cup of coconut cream (optional. This makes it thicker, but it does change the flavor.)
– 1 medium diced onion
– 3 cloves of minced garlic *omit for low FODMAP

1-Dice and chop everything that needs to be.
2a-Using a large frying pan with medium heat, add ghee and sauté the onions and garlic*omit for low FODMAP
2-Using a large frying pan with medium heat, add ghee and sauté the celery and carrots for about 5 minutes. Cover but stir occasionally. Then add the tapioca flour by sprinkling it over the vegetables and mixing it in well.
3-Add broth, tomatoes, tomato paste, salt and pepper. Partially cover and cook for at least 15 minutes, stirring occasionally.
4-Using an immersion blender, blend the soup in the pan. If you don’t have one, then ladle some soup into a blender and blend it in batches. Be careful since it’s hot soup.Â
Helpful hints – Sometimes I’ll buy one can of the Italian herbs fire roasted tomatoes for added flavor. It’s not as “traditional” so it’s a hit and miss for who likes it or not. This is a rare dish that I make one for everyone else and one for me. Split the recipe evenly into two pans.  Since I can’t have the onions and garlic, I do like the extra flavor of Italian herb tomatoes and coconut cream.
