Paleo – This version is all Paleo! 💯 The traditional dish is the shrimp on actual bread toast, but the Paleo version with the crispy cucumber is SO much better in texture and taste besides being healthier. It’s a win, win, win! haha 🙌
FODMAP – By substituting the bread to make this Paleo, we already made it FODMAP compliant. ✅
Macros – You can break this down to one serving if you want to make this for lunch in which case you control how many ounces of shrimp 🍤, how many tablespoons of mayonnaise, mustard, and dill you add. Often, I’ll make this for the four of us to split with a steak in order to hit my protein numbers but not overdo it with the fats from the mayonnaise.
servings, steps, & Ingredients
Servings – 4 servings as a part of a meal. Most often I make this as an appetizer since it sits so nicely on a cucumber which means the servings will vary.
Ingredients –
13-16 ounces of small to medium size shrimp with tails off
3-4 cucumbers, depending on the number of shrimp you have
4 tablespoons of Paleo mayonnaise or as clean as you can buy it (I have my favorite recipe in the North American section of this website.)
1 tablespoon of Dijon mustard (My kids like it better with regular mustard.)
2 tablespoons of freshly chopped dill, plus more for garnish (don’t skip this part and don’t use dried dill)
Optional is to add some colorful caviar for toppers
Steps –
1 – Remove the tails and devein the shrimp if necessary
2 – Peel and cut cucumbers to the number of shrimp you have
3 – Using a saucepan, fill it up with water about ¾ and bring to a boil. Drop the shrimp in batches and wait for it to turn pink, about 30 seconds after it turns pink, scoop it out. Repeat until all the shrimp is cooked. Wait for it to cool and dry before the next step.
4 – Using a large mixing bowl, add all of the shrimp then add the mayonnaise, mustard, and dill. Using a spatula, mix it all together.
5 – Lay out the cucumber slices flat on a serving tray. Place one piece of shrimp on each cucumber. Sprinkle dill and if adding caviar do that too.
Helpful hints – If you know the flavors your family or guests like, you can squeeze a lemon over the individual pieces. You could add more spice to the original mayonnaise by adding either tabasco, siracha, or horseradish.
