Paleo – Rice is not Paleo, 🍚 but I know many people who have rice as their cheat day or who don’t care about the technicalities and they consider it Paleo anyway.  With that said, I made this dish with white rice and with cauliflower rice.  Also, I do add a small dash of mirin, which is not Paleo.  It’s made from rice, so when I’m making this dish with rice, I’ll use mirin, but if I’m making it with cauliflower, I use more salt 🧂and furikake for more flavor.

FODMAP – For those who have more sensitivity to the Mannitol foods, weigh out the cauliflower to 3 ounces. With the weight of the juices, that will be less than 2 ½ ounces which is hopefully safe for you. If you know cauliflower is a trigger for you, stick to the rice option. 

Macros-This is easy to log. Whether you’re making this with rice or cauliflower rice, measure out a cup and log that plus an egg or two.🍳 

Servings-3

Ingredients
– 1 cup of cooked rice OR 2 cups of uncooked cauliflower rice
– 2 eggs
– 1 teaspoon of coconut aminos
– 1 teaspoon of mirin
– ½ teaspoon of Kosher salt, add more for personal preference
– Sprinkle Furikake across the top, get the Roasted Black Seaweed if you can

Steps

1-Make the rice in a rice cooker or in a saucepan over the stove.

2-As soon as the rice is done, divide a cup of rice into a bowl and immediately mix in a raw egg, coconut aminos, mirin, and salt.

3-Add a fried egg on top. Sprinkle Furikake across the top and eat while it’s hot.

Steps for cauliflower rice

1-If you need to “rice” the cauliflower, cut it in chunks before putting it in a food processor. Be careful not to pulse it too long however. Otherwise it will turn to mush. It’s pretty quick.

2-Using a medium frying pan or a wok, heat up the cauliflower for about 2 minutes then add coconut aminos, mirin, and salt.  

3-Using a small bowl, whisk an egg. Remove the cauliflower from the pan and immediately mix in the egg. Use the pan to fry the second egg. Sprinkle Furikake across the top and eat while it’s hot.   

Helpful hints – Furikake has different versions, and they are not made equally. Read the ingredients to make sure it’s as Paleo as possible. It will list what it’s good with, for example fish or salads, so look for one that says rice. Also, some people like an additional raw yolk in the middle of this dish for more authenticity.
