Paleo – Strict Paleo says no rice. However, many folks I know use it as their exception. I included a cauliflower rice option which tastes great, but the texture is different.

FODMAP – According to the Monash University research, we should not have more than two tablespoons of raisins. This dish has two tablespoons in total, so you should be good. 😉 For those who have more sensitivity to the Mannitol foods, weigh out the cauliflower to 3 ounces. With the weight of the juices, that will be less than 2 ½ ounces which is hopefully safe for you. If you know cauliflower is a trigger for you, stick to the rice option. 

Macros – Make the recipe in your app. 🔢 For rice, put four servings but two for cauliflower rice. You can eliminate the oil if you need to save fats, but it does change the texture. If you use bone broth, change your recipe so you count the protein 😏

Ingredients
– 1 cup of basmati or jasmine rice
– 2 cups of water (I love it with bone broth)
– 2 tablespoons of raisins, sultanas, golden or mix of any
– 1 teaspoon of coconut sugar
– 1 teaspoon of turmeric
– 1 teaspoon of grapeseed oil 

Steps
1-Using an InstaPot or a medium size saucepan (glass if you have it so you can see when the water is almost gone), add all the ingredients and gently stir. 

2-Using the InstaPot, cook on high pressure for 3 minutes. Leave it to let the pressure release all the way on its own.  -Using the saucepan, cook with the lid on for 20 minutes. Turn off the heat but leave the pan on the stove for 5 minutes afterwards before removing the lid.

3-Using a large spoon, gently stir before serving.

For cauliflower rice – Ingredients
– 1 head of cauliflower or already riced store bought cauliflower (two bags)
– ½  cup of chicken bone broth
– 2 tablespoons of raisins, sultanas, golden or mix of any
– 2 teaspoons of coconut sugar
– 2 teaspoons of turmeric (more to taste)
– 1 teaspoon of Kosher salt
– 1 teaspoon of grapeseed oil 

Steps
– 1a-Using a food processor, “rice” the cauliflower by cutting it in chucks and adding it into the food processor. Stop it once it’s chopped. If you let it go too long, it will become mushy.
– 1-Using a medium size frying pan on medium heat, add oil then cauliflower rice, salt, raisins, turmeric and coconut sugar. After a minute or so, add a cup of chicken bone broth. You don’t want water with this since it will remain bland, which is also why I doubled the seasonings.
2-Turn the heat to low and stir occasionally.  Continue to cook until the bone broth is very low.

Helpful hints – Some people like to rinse the rice before cooking it. If you have time, go for it. If you don’t have stomach issues with raisins, add two more tablespoons.

-I love turmeric. If you do too, add extra sprinkles as you’re cooking until you like it.
