Title – Spanish Rice and Cauliflower Spanish “Rice” with mild flavors

Paleo – Rice is not Paleo. 🍚 However, many people make this their exception. This recipe also works for cauliflower rice.  Your choice.

FODMAP – We need to take out the onions 🧅 and garlic 🧄. I serve this all the time and no one ever notices the missing ingredients.  If you’re using rice, keep it to one cup.  If you’re using cauliflower and you’re sensitive to mannitol foods, keep it to a half of a cup or go with the rice.

Macros – Measure out how much you want and just log the rice or cauliflower. Don’t worry about the seasonings. You can add ¼ can of the diced tomatoes if you’re being super strict with your #️⃣ counting.

Servings – 4

Ingredients –

2 cups of white rice
2 cups of chicken broth, preferable bone broth
½ cup of diced fire roasted tomatoes, chipotle seasoned
1-2 seeded and diced jalapenos
1 teaspoon of paprika
1 teaspoon of kosher salt
1 teaspoon of chili powder
½ teaspoon of cumin
½ teaspoon of oregano, Mexican oregano if you can get it

1 tablespoon of olive oil if adding onions and garlic

¼ cup diced of a small white onion add to step 1a *omit for low FODMAP
2 cloves of minced garlic add to step 1a *omit for low FODMAP

Steps –

Using an Instant Pot or a medium size saucepan, heat to a medium heat and add the olive
oil, garlic and onions to sauté for 2-3 minutes. *omit for low FODMAP

1 – Add all the ingredients and gently stir

2 – Using the Instant Pot, cook on high pressure for 3 minutes. Leave it to let the pressure release
all the way on its own.

3 – Using the saucepan, cook with the lid on for 20 minutes. After you turned off the heat, leave the pan on the stove for 5 minutes before removing the lid. Cook the cauliflower rice for 10-15 minutes to texture preference.  We like a little firm (al dente type), so we do 10 minutes.

4 – Using a large spoon, gently stir before serving.

Helpful hints – If you’re using a saucepan,  I recommend a glass pot so you can see the water level. Cooking the rice for 20 minutes is a rough estimate as it depends on how high you have the heat. With a glass pot, you can see the bubbles of the water and when you see it low, turn off the heat to avoid burning the rice.
