Paleo – Although coconut is Paleo, 🥥 sugar and flour are not which are normal staples in any macaroon. In order to make these, we need to make some substitutions.
FODMAP – No issues ✅
Macros – This is pretty much all carbs and fats. Plan your day accordingly. I’ve also made this for 16 servings so I can have two cookies instead of one. You can also make 8 bigger ones but change the servings in your app.🔢

Ingredients
– 3 egg yolks
– 1 cup of unsweetened coconut flakes
– ¼ cup of coconut sugar
– ½ cup of Paleo flour (if you can’t find it, use gluten free flour at least)
– ½ teaspoon of baking powder
– ¼ teaspoon of nutmeg, optional and recommended
Steps
Preheat oven to 350°
1-Using a baking sheet, line it with parchment paper.
2-Using a small mixing bowl, add the coconut, sugar, yolks, and baking powder. Using a spatula, mix the ingredients together.
3-Using your hands, roll the coconut mix into 12 equal balls. Then lightly roll the balls in the flour as a coating.
4-Place on the baking sheet with at least an inch between balls for expansion. Bake for 16-20 minutes. Start watching it at 16 minutes and take it out when it gets golden brown on the edges.
Helpful hints – The coconut sugar makes them look dark no matter what. The flavor changes just a bit based on how long you cook it and how big you make them. My husband loves these close to being burnt. Try them at different stages and find what your family likes.
-For a variety try Vanilla Coconut Sugar. Play with the serving size and make 8, 10, 12 and 14 to see what your family likes.
-The following picture is only using about a tablespoon of flour and sprinkling it over the top rather than rolling the balls. You can see the balls became more cookies.
