FODMAP – If you’re super sensitive to honey, take it out. 🍯 The one tablespoon spread out over the 16 servings is not enough to bother most FODMAP sensitive people.
Macros – Make a recipe in your app and divide it by the amount of cookies you make. 🔢
Servings-16 to 18
Ingredients
– 2 ¼ cups of finely shredded coconut
– ¾ cup of coconut milk, unsweetened and full fat
– ½ cup of almond flour
– 2 tablespoons of fresh lime juice
– 1 tablespoon of honeyZest of a lime, plus some for garish
– A pinch of sea salt
Steps-Preheat the oven to 250°
1-Using a baking sheet, line it with parchment paper.
2-Using a medium size mixing bowl, add coconut, almond flour, lime zest and salt. Mix together. Then mix in the remaining ingredients.
3-Use a cookie scooper or use your hands to roll the mix into balls. If you’re using your hands, lightly squeeze the ball to help hold it all together. Bake for at least 40 minutes or until the bottoms are a light golden brown. Let them cool completely before serving.
Helpful hints – They keep well in the refrigerator and honestly it tastes better cold!❄️ This is a go to for me when planning ahead for a party. People aren’t expecting the lime flavor, so it’s always a hit 🥳
