Paleo – Rice is not Paleo; 🍚 however, I know more Paleo eaters who consider rice acceptable than those who don’t. I have made this recipe and photographed it for you with rice and with cauliflower rice. Both dishes are just as tasty albeit the cauliflower rice is a tad juicier and the rice a tad drier.  

FODMAP – The original recipe has red onions and garlic which I will omit. ❌🧄🧅  I serve this ALL the time and no one has ever noticed the missing ingredients. For those who have more sensitivity to the Mannitol foods, weigh out the cauliflower to 3 ounces. With the weight of the juices, that will be less than 2 ½ ounces which is hopefully safe for you. If you know cauliflower is a trigger for you, stick to the rice option. 

Macros – I make the rice or cauliflower rice separately from the chicken 🐓 for easier macro counting.  You may need to play with the serving size which will depend on how big of serving you and your family will want.

Servings & Steps

Servings – 6

Ingredients
– 2 cups of white rice with 2 ½ cups of chicken stock, preferably bone brothOr4 cups of cauliflower rice with 1 cup of chicken stock, preferably bone broth
– 1 can of fire roasted diced tomatoes 16 ounces
– ½ cup of tomato paste
– 1 medium chopped red bell pepper
– 1 Scotch bonnet pepper or hatch pepper IF your family likes spicy
– 1 teaspoon of curry powder
– 1 teaspoon of paprika
– ½ teaspoon of curry powder
– ½ teaspoon of ground ginger
– 1 chopped red onion add to step 1a *omit for low FODMAP
– 4 cloves of minced garlic add to step 1a *omit for lowFODMAP 

Steps
1-Using a food processor, add can of tomatoes, bell pepper and the spicy pepper (Scotch or hatch)

1a-add the onion and garlic *omit for lowFODMAP

2-Using a medium to large saucepan, add all of the ingredients including the seasonings. Stir occasionally while bringing it to a boil. Then cover it and reduce the heat to low. Keep it covered for 20 minutes for the rice or 10 minutes for the cauliflower. The cauliflower option will be juicy. You can let it simmer with the lid off for another 10 minutes to decrease the sauce but it does change the texture of the cauliflower rice, so play it to your preference. Serve using a slotted spoon. 

Helpful hints – Make shredded chicken or bite size chicken to mix in with the rice.
