Cilantro and Coconut sauce

Macros – Divide into servings. 🔢 Otherwise, you can guess how much coconut milk you had. That’s all you need to log. 🤜 You can use just the coconut milk (without cream) or a can that has cream but mix it first. Make sure you have the fats though if you’re going to add the cream.
Servings – Depends on what you’re having with it. Generally, it’ll be 2 servings poured over a protein.
Ingredients –
½ cup of coconut milk
1/3 cup of freshly chopped cilantro
¼ teaspoon of cumin
The juice of half a lime
Steps –
1-Using a small mixing bowl, add all the ingredients and mix together.
Helpful hints – Taste it and adjust it as you prefer. Depending on the lime, I may add more juice, and I love cilantro, so I will often add more when making this for myself but only 1/3 cup for servings others.

Macros – Limit yourself to a tablespoon 🥄 and skip logging. If you have more than that, I suggest you log the smallest amount of arrowroot and a couple of strawberries. 🍓
Serving – a tablespoon
Ingredients –
1 cup of fresh strawberries or raspberries
2-3 freshly chopped jalapenos (depends how spicy you want it)
1 teaspoon of arrowroot (optional)
Steps –
1 – If using strawberries, cut the stem off.
2 – Using a small saucepan, add the fruit and chopped jalapenos. Cover and simmer for 15-20 minutes. Remove the jalapenos. If the fruit is extra juicy, you’ll notice it’ll be runny, so that’s when I add the arrowroot. Take a little bit of the juice out and mix it with the arrowroot before pouring it into the jelly. Mix it well and cook for another couple of minutes to thicken a bit. Let the jelly cool before serving.
Helpful hints – Every time I make this, I make it a tad different 🙃 I’ve added an extra ¼ cup of fruit but never more than a ½. Taste the jalapeno 🌶 if it’s not that spicy, then add more, but this is really up to you and what your family likes 😵
