Paleo – Make your own mayonnaise or store-bought Paleo mayonnaise. Also, find the cleanest bacon you can get, preferably Whole 30 approved.๐ฅ

Macros – This kills our fat numbers! ๐ I suggest only eating this at a party. If you make it for yourself, you can decrease the fat by using only half of the yolk mix.
Servings, Steps, & Ingredients
Servings – 12 (a whole egg so two halves)
Ingredients –
12 eggs, preferably organic
4 slices of bacon, preferably Whole 30 approved but at least no added sugar or nitrates
1/3 cup of Paleo mayonnaise
1 tablespoon of Dijion mustard
1 teaspoon of balsamic vinegar
Pinch of Kosher salt
Steps –
1 – Hard boil the eggs and let them cool. Then deshell them. Cut them in half and remove the yolk.
2 – Cook the bacon until barely crispy. Let it cool then break it into small pieces.
3 – Using a medium mixing bowl, add the yolks, mayonnaise, dijon mustard, bacon, and balsamic vinegar. Then using a spatula, mix it all together.
4 – Using a piping bag or a ziplock bag with a cut corner put the mixture into the bag and pipe it into the eggs. Itโs all about presentation. If you donโt want to do all that, just use spoons and scoop the mixture into the eggs.
5 – Drizzle a tad bit of balsamic vinegar and salt on top of the eggs then top off each one with a few bacon bits.
Helpful hints – Because of the bacon pieces, choose a wide tip for the piping bag. Although I love the decorative tips, it is a challenge with the bacon bits so be mindful of the one you choose.
