Paleo – All Paleo đź’Ż Some people add red onions. Whatever you add though, keep it natural.

FODMAP – Since we can’t add red onions, ❌🧅 if you want more flavor, use a grapeseed oil that is infused with more seasonings

Macros – Log it as is for the individual ingredient. Make sure you measure the oil. If you don’t have the fats that day, use Kosher salt instead and let it sit for an hour in the frig to draw out the juices and you won’t miss the oil.

Ingredients
– 1 cucumber cubed
– 3 oz of cherry tomatoes or a cubed medium vine tomato
– 1 to 2 teaspoons of olive oil or flavored grapeseed oil or no oil
– use Kosher salt only
– cilantro or Italian parsley or both
– chopped salt and pepper to taste

Try to cut the cucumber and tomatoes to be roughly the same size. If you want to use an oil, start with only one teaspoon. Use a large spoon or spatula to coat all of the cucumbers and tomatoes before trying it. Add a half a teaspoon at a time from there.  You really don’t want too much.  

Helpful hints-Make sure the vegetables are fresh. Tomatoes 🍅 in a particular are not created equal.  If you picked a certain type and didn’t like this, then try a different type next time. Also, people love this at parties, so take it with you when you’re expected to bring something. Then you’ll have at least one dish you can eat.
