Paleo- All Paleo đź’ŻFODMAP- No issues âś… I love cooked cabbage, so I added this since we don’t want chunks of onions.Macros- I only weigh and log the pork, using a slotted spoon to get the pork out.  Then I use a ladle to get lots of cabbage and broth.  With the juices of the cabbage and the pork, the broth will not measure ⚖️ correctly and we can never have too much bone broth! đź™Ś  If you’re being absolute, then you can log half of the liquid you take as broth. For example, if you take 2 cups of liquid, log 1 cup of bone broth. Ingredients-

3-5 pounds pork, cut into cubes

2 cups chicken broth or chicken bone broth

1 pound tomatillos, husked and cut into quarters2-4 jalapeno peppers to personal taste, cut in half, stemmed and seeded 1 Anaheim chile, cut in half, stemmed and seeded1 full bunch cilantro, chopped (keep some for garnish)½ head cabbage, chopped in same size as the pork

Salt and pepper to personal taste

1 large onion, chopped in same size as the pork *omit for lowFODMAP

8 garlic cloves, skins on *omit for lowFODMAP

Steps-

1-Cut pork into cubes and season it with salt and pepper2-Using a large frying pan over medium heat, brown each side of the pork in batches, then put it directly into the crockpot or Instapot3-Remove the husks from the tomatillos, rinse, cut into quarters, lay out on a baking sheet.  Add jalapenos and Anaheim chile (if you can handle garlic, add the cloves). Broil until peppers start to turn black, about 10 minutes.4-Using a large zip lock bag, put peppers/chile in it and let it steam for 5 minutes. Remove skins. Add to food processor. (Remove skins of garlic and add to food processor.)  Add tomatillos and cilantro to food processor and pulse until it all becomes liquid. Pour it over the pork. 5-Add chicken broth, if adding diced onions do that and stir all ingredients6-crockpot: cook for 3+ hours

-pressure cooker: cook for 25 minutes with natural release

7-Add the cabbage to the crockpot about an hour before serving or less depending on the desired texture, make sure to submerge it in the broth.

-Using a slotted spoon, remove the pork from the pressure cooker and submerge the cabbage. Set the high pressure for 2 minutes and release the pressure when done. Add the pork back and serve when ready.

Helpful hints-

I love ❤️ soup therefore I enjoy more sauce and eat it in a bowl.  My husband is not a soup person and eats it on a plate with little sauce, as a compliment to the meat, rather than a broth like me.
