Paleo – Follow the helpful notes on how to make condensed milk with coconut milk 🥥. I have bought coconut condensed milk in a specialty grocery store, but the home made version has more flavor. The toppings can be crushed nuts or shredded coconut, but my kids recommend you make a Paleo exception and use rainbow sprinkles. My husband and I agree. 😉
FODMAP – Although all of these ingredients are FODMAP friendly, it is still sugar which means we need to limit our serving size to 2-3.
Macros – The best thing is to make a full recipe and put in many how servings you were able to get from that batch. Make sure to include the toppings.
Ingredients –
1 tablespoon ghee, plus some for greasing the bowl
3 tablespoons cocoa powder
1 can (14 ounces) sweetened condensed milk or Paleo coconut condensed milk
Pinch of salt
Toppings of choice: shredded coconut, crushed nuts or sprinkles

Steps –
1 – lightly grease a medium-size mixing bowl with ghee
2 – add ingredients (ghee, cocoa powder, condensed milk, salt) to medium size nonstick frying pan *see step 8 for Paleo condensed milk
3 – gently stir over medium-low heat until the ghee melts and the ingredients combine. The mixture is done after it has thickened and slides around the pan easily.
4 – put the mixture into the greased medium bowl to cool for two hours at room temperature
5 – put toppings of choice into a small bowl
6 – using a small spoon, scoop some mixture and roll into 1 inch balls, then roll the ball in the toppings bowl until coated
7 – can be eaten right away, set out at room temperature or chilled first
Helpful notes – Paleo condensed milk will need 28 ounces full-fat coconut milk and ½ cup coconut sugar (use a light-colored product. I like the coconut vanilla blonde sugar. You can use maple sugar if you want a different flavor.)
-use a medium-size saucepan and bring the coconut milk to a simmer before adding the coconut sugar. Simmer, stir and scrape the bottom and sides to prevent burning, continue for 1.5 to 2 hours until the mixture has reduced about half. Store in a glass jar in the refrigerator up to 5 days.
