Paleo – The meat can be all lamb or all beef. 🥩

FODMAP – According to the Monash University research, we should not have more than two tablespoons of raisins. This dish has four in total, so you should be good. 👍

Macros – Make a recipe and decide how many servings your family wants. 🔢

Servings – 4 as a meal and 6 as a side dish

Ingredients –
1 pound of ground beef
1 pound of ground lamb
1 cup of coconut milk
2 eggs
6 bay leaves
¼ cup of raisins
2 tablespoons of curry powder
1 tablespoon of coconut aminos teriyaki sauce
1 teaspoon of turmeric
½ teaspoon of ground cumin
½ teaspoon of ground ginger
½ teaspoon of marjoram
¼ teaspoon of cinnamon
pinch of cloves
Salt and pepper to taste about at least ½ teaspoon of each
1 tablespoon of fat, 1 chopped onion and 2 cloves of minced garlic add to step 1a *omit for lowFODMAP

Steps

Preheat the oven to 350°
1a- Using a large frying pan with medium heat, add your fat of choice and sauté the onions and garlic *omit for lowFODMAP
1- Using a large frying pan with medium heat, add the two pounds of meat and cook on medium heat.  Once it’s broken up, add the seasonings and the raisins.  Cook until meat is cooked through.  Then spread it evenly on the bottom of a lasagna or baking pan.
2- Using a small mixing bowl, beat the eggs, add the milk and mix that.  Then pour it over the meat.  Place the bay leaves in six areas of the casserole and bake it for 40 minutes or until you see the edges turn a nice brown color.

Helpful hints – There are many versions of this but all with the same meat 🍖 and egg 🥚 casserole concept.  Play with the seasonings. If you don’t like a flavor, take it out.  If you want more of something, do! 😋
