Paleo – This technically is not Paleo because we are going to use semisweet chocolate chips. 🍫 The original recipe calls for regular sugar, but it tastes better with coconut sugar 🥥 and at least allows us to get closer to the Paleo concept.
FODMAP – No issues ✅ unless you eat the whole batch, but those issues are for anyone!
Macros – You’ll need to make a recipe in your app if you don’t have 24 circles, which will depend on your cookie cutter.🔢⃝

Ingredients
– ¾ cup of almond flour
– ½ cup of coconut sugar
– 3 ounces of semisweet chocolate chips
– 1 beaten egg white
– 1 teaspoon of ground cinnamon1 pinch of ground cloves
– a VERY little amount of powdered sugar for dusting, or my favorite-non at all
Steps
1-Using a food processor, add the almond flour, sugar, chocolate, cinnamon and cloves and pulse until finely ground. Add the egg white and pulse some more. Scrape the sides and mix again. Add a little bit of almond flour if needed to make one big lump of dough.
2-Take the dough out and wrap it in plastic wrap, put it in the refrigerate for at least 2 hours, overnight is totally fine too.
3-This will be sticky but we don’t want to add too much flour (to keep the macros manageable), so add as little flour as needed. It helps to roll this out using parchment paper. Put some of the dough in between two sheets of parchment paper and roll it out to desired thickness, about ¼ inch (25 ml).
4-Cut the dough into the circles using either a cookie cutter or a small-rimmed glass. Put a fresh sheet of parchment paper on a baking sheet and place the cookies on it. If you’re adding powder sugar, now is the time to do that. Set out to dry out for three hours or overnight in the refrigerator.
5-Preheat oven to 300° (140°C, 2 GasMark). Bake for 14-16 minutes. You’ll notice little puffy spots. Have them cool in the pan for at least 5 minutes then move to a wire rack. Let them cool completely before eating.
Helpful hints-Don’t skip the time the dough needs to chill. The colder it is, the easier it is to work with and requires less flour.
